Michoacán’s Mezcal

Michoacán’s mezcal has gained wide recognition for its quality. In Michoacán there are 29 municipalities that have producing regions with authenticated “Mezcal Designation of Origin,” in 2012, the State of Michoacán began to appear among states with this designation.

Mezcal is one of Michoacán's traditional distilled drinks.

So what are the steps to make mezcal?

 

1.     When of proper maturity, the stalk of the agave is cut from the plant.

2.     The “meat” of the agave is cooked and crushed.

3.     It is then fermented and distilled.

4.     Finally, it is tasted for quality.

The history of mezcal in Mexico dates back to at least 400 B.C. The meaning of mezcal in Nahuatl is “cooked maguey.”  After the conquest by the Spaniards of “New Spain,” they introduced the still, the machete, cargo animals. and the mill, and together with it the distillation technique.

During colonial times, mezcal was widely accepted among the Mexican inhabitants, but its sale was prohibited because it was considered harmful to health, and Spanish spirits were the preferred alcoholic beverage.

Then, in the 19th century, tequila became more prevalent than mezcal.

That said, for the native Mexicans, it remains part of their traditions and ancestral cultures and agricultural rituals, including celebrations such as weddings, baptisms, burials or the Day of the Dead, and patron saint festivities.

Mezcal is one of the traditional Mexican drinks which, as we have seen, has a long history.  Its combination with Mexican food is an authentic culinary experience; the pairing of mezcal with Mexican dishes is perfect.
