Traditional Tortillas with Native Michoacan Corn
Michoacan cuisine is held in the highest esteem by our

the Lake Patzcuaro and Lake Zirahuen basins, several strains
of native maize developed by the Purhepecha
community before the arrival of the Spaniards are still harvested.

These
Michoacán varieties are not only
used to make tortillas, but also the
traditional gorditas, sopes, tamales, corundas, pozole,
atoles and ponteduro (a sweet made from corn). They
are also used in the confection of the famous pinole, with which we
make our traditional cookies at Doña Paca Restaurant.
The
tortilla is the base of Mexican cuisine and dates from
pre-Columbian times. Food lovers will find many dishes prepared with various
local products in the Lake Region, but the tortilla
will always be present.

“It’s all in the dough!” You might taste
a slight flavor of lime in these tortillas. The lime is what gives its high

the “hand-made” process, by which they are to support their families, as well
