Mexican Cuisine was declared an Intangible Cultural Heritage of Humanity by UNESCO in 2010. Michoacán is registered on the list as "Traditional Mexican, Cultural Community, Ancestral and Alive – the Michoacán Paradigm.”

The first annual Festival of the Mexican Cuisine was held from April 28 to May 2 in Mexico City, with Michoacán as a principal guest.  It was an event where the cuisine of Mexico is specifically showcased. This festival presented the varied regional flavors, with more than 300 dishes from all over the country.

Discovering Mexico through the palate is a singular experience, and at this festival we fully appreciated the diversity of Mexican food, the creativity Mexico today, with innovative flavors, as well as the tradition of delicious dishes using ancestral recipes.

This was a great culinary experience, which started off with the sale of fresh products used in different dishes.  Plus, demonstrations of the process of making chocolate (complements of the Chocolate Museum), and “coffee cuisine” of Coatepec, incorporating gourmet products.

The most representative of Mexican Cuisine was present, including some top restaurants. Representing Michoacan were the Traditional Cooks of Blanca Villagomez (Tzintzuntzan) and Victoria Gonzalez (Apatzingán), and Mirasoles Restaurant (Morelia).
